Pink Squirrel
4 shots out of 5
How many of you used to watch Rosanne? I wasn't a hard core Rosanne fan, but I did watch enough to know who everyone was, each person's stories and I do remember when the oldest daughter moved out and into a wee little apartment with her boyfriend. That being said, tonight's cocktail was sent to me by Holly. Holly first heard of this cocktail years ago on an episode of Rosanne.
I gave tonight's cocktail 4 shots out of 5. This cocktail is pretty darn good! I think it would make an absolutely fabulous blended cocktail as well! The creaminess reminds me of the Chi Chi that I made back in February. This is a simple cocktail to make and if you are in the mood for a creamy cocktail, this is the one for you. I can absolutely taste each ingredient in this cocktail, it's as Holly describes "Its mild, creamy, and nutty, with just a slight hint of chocolate". If you like that combination, you'll definitely like this cocktail!
Here is the recipe for the Pink Squirrel:
- 1 shot amaretto (Holly's recipe called for cream de noyaux, which neither one of us has been able to find lately, so she said any almond type cream liqueur will work)
- 1 Tbsp white creme de cacao
- 1 Tbsp light cream (I only had heavy cream, which tasted fine, but I can tell the light cream would work better making it a lighter cocktail)
In a shaker, add ice, amaretto, white creme de cacao and cream. Shake it up real good to get everything blended up well. In a martini glass, place a maraschino cherry in the bottom and strain your cocktail right on top.

Thank You Holly for your recipe for the Pink Squirrel! This is definitely a cocktail worth making and enjoying again!!
Cheers!!
